Lemon Mint Cordial

I stumbled across this amazing recipe for citrus herb cordial over at InnBrooklyn. According to dictionary.com one of the definitions of cordial is "anything that invigorates or exhilarates." This recipe lives up to that description! My mom tested the recipe out first by making lime and mint cordial and she reports that it was excellent. While I debated driving the three hours to see her and taste her cordial, I made my own instead. I used a lemon and mint combination and I am officially addicted!

I wasn't up for canning, so I only made a third of the recipe. After hand squeezing 16 lemons...

and a few minutes over the stove, I was left with this amazing drink mixer!



I have mixed it with water, soda water, ice tea, and vodka. It makes for a wonderfully refreshing summer drink. Next I think I am going to try a lemon/rosemary cordial. There is no doubt that this cordial will be a staple in my refrigerator this summer!
